FREEZER CORN

Cut 20 cups of Von Bergen's homegrown sweet corn off the cob (approximately 25 ears)

Make a solution of the following:

5 cups ice water
1/2 cup sugar
1/4 cup salt

Add solution to corn, let set for 5 to 10 minutes and then put into freezer containers or bags.
ZUCCHINI-GARLIC PASTA

1 pkg. (16oz.) wagon wheel pasta
1/2 lb sliced bacon, diced
1 medium onion, chopped
4-6 garlic cloves, minced
2-3 medium zucchini, halved and sliced
1/2 tsp. salt
3 Tbs. lemon juice
1/4 cup grated Romano or Parmessan cheese

Cook pasta according to package directions. Meanwhile, in a large skillet over medium heat, cook bacon until crisp. Remove with a slotted spoon and set aside. Saute onion and garlic in drippings until tender, (3 min.) add the zucchini mixture. Add lemon juice and bacon; toss. Transfer to a serving bowl or platter; sprinkle with cheese.
ZESTY REFRIGERATOR PICKLES

Bring to a boil:
5 cups water
2 cups white vinegar
1/2 cup canning salt

Let brine cool to room temperature

Layer in quart jars:
Pickles (either whole or sliced)
Fresh dill heads
1 Tbsp. garlic
Jalepeno peppers

Pour brine into quart jars, refrigerate immediately, let sit for at least 10 days. Makes 4 quarts or one gallon.


STIR-FRIED ASPARAGUS WITH SOY SAUCE

1 lb. asparagus, trimmed & cut diagonally into 1/2" thick pieces
2 tbsp. low sodium soy sauce
1 1/2 tsp. finely chopped fresh ginger
1 garlic clove, finely chopped
1 1/2 tbsp. dark sesame oil
1 tbsp. sesame seeds

In a small bowl, combine soy sauce, ginger and garlic and set aside. In a wok, or heavy bottomed skillet, heat the oil over medium high heat. Add the soy mixture and the asparagus, and stir fry for 3 minutes. Cover and allow the asparagus to steam until just tender, about 2 minutes. Stir in the sesame seeds and serve immediately.
